Chicken Noodle Soup

Here’s a simple and delicious recipe for homemade Chicken Noodle Soup:

Ingredients
For the Soup:
1 tablespoon olive oil or butter
1 medium onion, chopped
2-3 cloves garlic, minced
2-3 medium carrots, sliced
2-3 celery stalks, sliced
8 cups (about 2 liters) chicken broth or stock
2 cups cooked chicken, shredded or diced (use rotisserie chicken for ease)

    1 teaspoon dried thyme
    1 teaspoon dried parsley (or a few sprigs of fresh parsley)
    Salt and pepper, to taste
    Optional: Bay leaf, lemon juice, or fresh herbs for garnish

Instructions
Sauté the Vegetables:
In a large pot, heat the olive oil or butter over medium heat.
Add the chopped onion, garlic, carrots, and celery.
Cook for about 5-7 minutes until the vegetables are softened.
Add Broth:
Pour in the chicken broth and bring to a boil.
If using a bay leaf, add it at this stage.
Add Chicken and Herbs:
Once boiling, reduce the heat to a simmer and stir in the shredded chicken, thyme, and parsley.
Season with salt and pepper to taste. Let it simmer for about 10-15 minutes.
Cook the Noodles:
Add the egg noodles to the pot and cook according to the package instructions, usually about 6-8 minutes, or until al dente.
Taste and Adjust:
Taste the soup and adjust seasonings. If desired, add a squeeze of lemon juice for brightness.
Serve:
Remove the bay leaf (if used) and serve the soup hot, garnished with fresh parsley if desired.

Tips
You can customize this soup with additional vegetables like peas or green beans.
If you’re making it ahead of time, you might want to cook the noodles separately and add them to individual bowls when serving to prevent them from becoming mushy.
For extra flavor, consider adding a splash of soy sauce or Worcestershire sauce.
